Vegan pancakes

Yum! One of my favourite weekend brunch treats is delicious pancakes! Pancakes are surprisingly easy to make and super versatile. My favourite toppings are fried bananas, lemon juice, fresh berries, and of course, maple syrup!

To make pancakes, you’ll need:

1 cup flour

2 tablespoons sugar

1 tablespoon baking powder

½ teaspoon salt

1 cup of non-dairy milk

1 tablespoon apple cider vinegar

1 teaspoon vanilla (optional)

Maple syrup & toppings of your choice, to serve

 

Steps:

1. In a medium-sized bowl, combine and stir dry ingredients - flour, sugar, baking powder, and salt.

2. In a separate bowl, combine your milk of choice with the apple cider vinegar, and vanilla. Stir to combine

3. Pour liquid mixture into dry mixture and whisk until smooth pancake batter appears, let sit for 5 minut

4. Heat a non-stick pan over medium heat and add ½ cup of the batter. When the top forms bubbles, time to flip and cook until golden

5. Serve with maple syrup and your toppings of choice

6. Enjoy!
