Warming Winter Lentil Soup

We love soup here at Hopper! You’ll often find us bringing homemade soups in for our lunch and this one using green lentils is a goodie! Chunky soups with seasonal vegetables are perfect for Winter and the combination of thyme and rosemary makes this one really hearty, warming, and ideal for cosy lunches!

You’ll need:
2 tablespoons olive oil
2 cloves garlic, minced
1 white onion, diced

4 large carrots
4 stalks celery
¼ teaspoon salt (plus more to season)

¼ teaspoon pepper (plus more to season)
3 cups of diced potatoes

4 cups of vegetable stock/broth

2-3 sprigs of thyme and rosemary

1 cup of rinsed green lentils
2 cups of chopped kale

Steps:

  1. Heat a large saucepan over medium heat and add oil, onion, carrots, and celery. Season with salt and pepper, stir and saute for 4-5 minutes

  2. Add potatoes, season with more salt and pepper and cook for 2 more minutes

  3. Add broth, rosemary & thyme and turn heat up to medium-high. Add green lentils and stir. Once simmering, reduce heat to low and simmer uncovered for 20 minutes or until potatoes and lentils are tender

  4. Add kale, stir and cover. Cook for 5 minutes until wilted. Taste and adjust for flavour - adding more salt, pepper, broth or herbs if needed

  5. Enjoy!
